Mechanicsville, VA (August 2019) – The Morgan Companies (“Morgan Cos.”) is pleased to announce the opening of Chicken Salad Chick at Brandy Creek Commons, a Publix-anchored shopping center in Mechanicsville. The restaurant will occupy a 2,600 SF endcap with drive-thru and is targeting a February 2020 opening.
Restaurant operator Tim Collins, along with his wife Kim and father Rick, is preparing to open two Chicken Salad Chick restaurants in the Richmond area concurrently, the other located at a Publix-anchored shopping center in Henrico. The two locations will be the restaurant chain’s first Virginia locations.
The new stores are not the Collins family’s first experience in opening a new-to-market restaurant. The trio previously operated the region’s first Stevi B’s Pizza at 9158 Atlee Road in Mechanicsville, a property which is also owned and managed by Morgan Cos.
Based in Auburn, Alabama, Chicken Salad Chick was founded in 2008 by Stacy Brown, and her late husband Kevin, out of the couple’s home kitchen. They opened their first brick-and-mortar location a few years later and quickly grew to 129 stores spread across 14 states. The menu includes 12 chicken salad options, several versions of pimento cheese, egg salad, soups, salads, and signature sandwiches.

The addition of Chicken Salad Chick means that Brandy Creek Commons is now 100% leased. The center’s other tenants include Five Guys, MOD Pizza, Pet Valu, Hair Cuttery, VA ABC, and Noire the Nail Bar. There is a pad site available for a build-to-suit opportunity.
